Picagge or “chef’s apron strings,” are long pasta strands that are 4 cm wide and 15 cm long, cut from lasagne sheets, that resemble tagliatelle. Produced in the province of Cuneo, our Picagge combine experience, technique and Piemontese passion to create an exceptional example of this traditional, Ligurian product. We use the best ingredients possible and employ a particular cold rolling process, an innovative system in which the sheets of pasta are produced at the correct thickness directly from the mixture. This cold working process preserves the flavors of the past and resembles the pasta our grandmothers made by hand with a rolling pin. Our sauces are the perfect accompaniment to our Picagge, as they enhance the flavor of the pasta. Eggs come from free range chicken bred in Italy.
